Recipe: Specifically for Bombay Pav Bhaji.
1. Start by boiling 200g of potatoes. After they are cooked, peel them and cut into cubes.
2. At the same time, boil 150g of mixed vegetables, like peas, cauliflower, and carrots.
3. Using a deep pan, saute 100g of finely diced red onions in 60g of butter until they achieve a golden-brown Colour .
4. Then, stir in 100g of roughly chopped tomatoes, 15g of Pav Bhaji masala, and a pinch of salt.
5. Add the boiled vegetables along with 1/2 cup of water, then mash and combine everything over high heat for approximately 10 minutes.
6. To finish, butter slices of bread or split baps, toast them, and serve with the hot bhaji.
Ingredients: Coriander seeds, red chilli es, dried mango, cumin, iodised salt, fennel seeds, cassia, dried ginger, black pepper, cardamom (Amomum), cloves, star anise, nutmeg, and mace.
